Ingredients

  • 2 cups of basmati rice
  • 500g of chicken livers, cleaned and chopped
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1/2 cup of pine nuts
  • 1/2 cup of raisins
  • 1 tsp. of cumin powder
  • 1 tsp. of cinnamon powder
  • 1 tsp. of turmeric powder
  • 1/2 tsp. of black pepper powder
  • 4 cups of chicken broth
  • 2 tbsp. of olive oil
  • Salt (to taste)

Instructions

  1. Wash the rice several times until the water runs clear and soak it in cold water for about 30 minutes. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Add the minced garlic and sauté for another minute.
  3. Add the chopped chicken livers and sauté until they’re browned.
  4. Add the spices (cumin, cinnamon, turmeric, black pepper powder), pine nuts, and raisins. Sauté for a couple of minutes until all the flavors are combined and the spices are fragrant.
  5. Add the soaked rice to the pot and stir until it’s well coated with the spices mixture.
  6. Add the chicken broth and salt (to taste) and bring the mixture to a boil.
  7. Reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork and serve hot.
