Ingredients

  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can chickpeas, drained and rinsed
  • 2 large potatoes, peeled and cut into bite-sized pieces
  • 1 large carrot, peeled and cut into bite-sized pieces
  • 1 red bell pepper, seeded and chopped
  • 1 yellow bell pepper, seeded and chopped
  • 1 can chopped tomatoes
  • 1/2 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper, to taste
  • Oil for frying

Instructions

  1. Preheat the oven to 375°F.
  2. Heat some oil in a large skillet over medium-high heat. Add onions and cook until softened, stirring occasionally for about 3-5 minutes. Add garlic and ginger, and cook for another minute.
  3. Add potatoes, carrots and bell peppers to the skillet, and cook for 5-7 minutes, stirring occasionally.
  4. Add cumin, coriander, turmeric, smoked paprika, cinnamon, cayenne pepper (if using), along with salt and black pepper to taste, and stir until the vegetables are evenly coated. Cook for another minute.
  5. Add chickpeas, canned tomatoes, vegetable broth, tomato paste, and cilantro. Stir to combine everything thoroughly.
  6. Bring it to a simmer and cook for 5-7 minutes until the sauce thickens.
  7. Transfer the mixture to a baking dish. Cover the dish with aluminum foil and bake for 30-35 minutes or until the vegetables are tender.
  8. Serve hot with steamed rice or naan bread.
