Ingredients:

For the pork:.

  • 2 pounds pork tenderloin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • Salt and pepper to taste

For the sweet potatoes:.

  • 4 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt to taste

Instructions:

1. Preparing the pork:

Preheat your oven to 375°F (190°C). In a small bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper. Mix well to create a marinade for the pork.

Place the pork tenderloin on a cutting board and rub the marinade mixture all over it, making sure it is well coated. Let the pork marinate for at least 30 minutes to allow the flavors to penetrate.

2. Roasting the pork:

Transfer the marinated pork tenderloin to a roasting pan and place it in the preheated oven. Roast for about 25-30 minutes or until the internal temperature reaches 145°F (62°C).

Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper. Place them in the oven and roast for about 25-30 minutes or until they are tender and slightly caramelized.
