: Ingredients

  • 125 g of cold butter
  • 1 cup of bulgur wheat
  • 1 onion, chopped finely
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 bunch of spinach, chopped
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 eggs
  • 1/2 cup crumbled feta cheese
  • 1/4 cup milk

: Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Grease a 9-inch pie dish with butter.
  3. In a medium sized saucepan, bring 2 cups of water to a boil.
  4. Stir in the bulgur wheat and reduce the heat to low. Cover and let it simmer for about 15 minutes or until tender.
  5. While the bulgur is cooking, heat the olive oil in a skillet over medium heat. Cook the onions until soft and translucent, then add the garlic and spinach. Cook until the spinach is wilted and set aside.
  6. In a large mixing bowl, cut the butter into small cubes and add the cooked bulgur, onion, garlic, and spinach mixture. Mix together well.
  7. Add the paprika, cumin, salt, and pepper. Mix well.
  8. In a separate bowl, whisk together the eggs and milk. Add the egg mixture to the bulgur mixture and mix until well combined.
  9. Stir in the crumbled feta cheese and mix well.
  10. Pour the mixture into the prepared pie dish and smooth the top with a spatula.
  11. Bake for 30-40 minutes or until golden and firm to the touch.
  12. Remove the pie from the oven and allow it to cool slightly before serving.
