Ingredients:

For the Crust:.

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cubed
  • ¼ to ½ cup ice water

For the Filling:.

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 ½ pounds fresh spinach, washed and chopped
  • 1 cup feta cheese, crumbled
  • ½ cup ricotta cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon nutmeg
  • 2 eggs, lightly beaten

Instructions:

Step 1: Prepare the Crust

In a large mixing bowl, combine the all-purpose flour and salt. Add the chilled and cubed butter to the flour mixture. Using a pastry cutter or your hands, blend the butter into the flour until it forms crumbs.

Gradually add the ice water and mix until the dough comes together.

Divide the dough into two equal parts and shape them into disks. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.

Step 2: Make the Filling

In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté until the onion turns translucent and the garlic becomes fragrant.

Add the chopped spinach to the skillet and cook until wilted. Remove the skillet from the heat and allow the spinach mixture to cool slightly.

In a separate bowl, combine the crumbled feta cheese, ricotta cheese, dried oregano, salt, black pepper, nutmeg, and eggs. Mix well.

Add the spinach mixture to the cheese mixture and stir until all the ingredients are well combined. Set the filling aside.

Step 3: Assemble the Pie Bridge

Preheat your oven to 375°F (190°C).

On a lightly floured surface, roll out one of the chilled dough disks into a circle large enough to fit your pie dish. Carefully transfer the rolled-out dough to the dish, gently pressing it against the bottom and sides.

Pour the spinach and cheese filling into the dish, spreading it out evenly.

Roll out the second chilled dough disk into a circle similar in size to the first one. Cut the dough into thin strips to create a lattice pattern on top of the filling. Weave the strips over and under each other to form a pie bridge.

Press the edges of the bottom and top crusts together, sealing the pie. Trim any excess dough hanging over the edges.

Step 4: Bake and Enjoy

Place the assembled spinach pie bridge in the preheated oven and bake for approximately 40 minutes, or until the crust is golden brown and the filling is heated through.

Once baked, remove the pie from the oven and let it cool for a few minutes before slicing and serving.

This spinach pie bridge is a delightful dish that can be enjoyed as a main course or as a side dish. Serve it warm and watch as your friends and family are impressed by the delicious flavors and beautiful presentation!.
