Instructions
Baklava Layer
- Preheat your oven to 350 degrees F.
- Combine your walnuts, pistachios, sugar, and cinnamon in a bowl.
- Using a pastry brush, lightly brush melted butter on the bottom and sides of a 9-inch springform pan.
- Unwrap your phyllo pastry and place 1 sheet on the bottom of the pan. Brush it with melted butter.
- Layer another sheet on top and brush it with melted butter. Continue this process until you have used 8 sheets of phyllo pastry.
- Sprinkle a third of your nut mixture onto the phyllo pastry.
- Add another 2 sheets of phyllo pastry, brushing each sheet with melted butter.
- Add in another third of the nut mixture.
- Repeat with another 2 sheets of phyllo, brushed with butter, and the remaining nut mixture.
- Add the final 8 sheets of phyllo pastry, brushing each sheet with melted butter.
- Brush the top layer with butter and use a sharp knife to cut the baklava into diamond shapes.
- Place the baklava in the oven and bake for 35-40 minutes, or until golden brown.
- While the baklava is baking, make the cheesecake layer.
Cheesecake Layer
- In a large mixing bowl, beat cream cheese and sugar until fluffy.
- Add in eggs one at a time, beating after each addition.
- Mix in sour cream and vanilla extract.
- Pour the cheesecake mixture on top of the baked baklava layer.
- Reduce your oven temperature to 325 degrees F and bake the cake for an additional 45-50 minutes, or until the cheesecake is set.
- Remove from the oven and let cool.
- Refrigerate the cake for several hours or overnight before serving.
