Ingredients

  • 1 package dried cannelloni tubes (approximately 10-12 tubes)
  • 4 cups fresh spinach, washed and chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the cannelloni tubes according to package instructions, then drain and set aside.
  3. In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of shredded mozzarella, Parmesan cheese, beaten egg, garlic powder, salt, and black pepper.
  4. Using a spoon, stuff the spinach and cheese mixture into the cooked cannelloni tubes. Arrange the stuffed tubes in a 9×13 inch baking dish.
  5. Pour the marinara sauce over the top of the cannelloni tubes, making sure that all of the tubes are covered. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top.
  6. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the cannelloni tubes are cooked through.
  7. Let the cannelloni cool for a few minutes before serving.
