: Ingredients

  • 1 pound boneless pork loin, cut into cubes
  • 2-3 sweet potatoes, peeled and diced into 1-inch cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil

: Instructions

1. Preheat the oven to 375°F.

2. In a large bowl, combine the pork cubes with thyme, paprika, cumin, salt, and black pepper. Mix well until the pork is evenly coated with the spices.

3. In a large skillet over medium-high heat, heat the olive oil. Add the pork cubes and cook for about 5 minutes, stirring occasionally, until browned on all sides. Remove the pork from the skillet and set it aside.

4. In the same skillet, sauté the onion and garlic for 2-3 minutes, until fragrant. Add the diced sweet potatoes and red bell pepper to the skillet and sauté for another 5-10 minutes, until the vegetables are slightly softened.

5. Add the browned pork cubes back to the skillet, along with chicken broth. Stir well to combine.

6. Transfer the pork and vegetable mixture to a large casserole dish. Cover the dish with aluminum foil and place it in the preheated oven.

7. Bake the casserole for 30-35 minutes. Then, remove the foil and bake for another 10-15 minutes, until the pork is cooked through and the sweet potatoes are fork-tender.
