The smooth and creamy ricotta cheese pairs perfectly with the earthy and savory mushrooms, resulting in a flavor-packed tart that is sure to impress your taste buds. Whether you’re looking for a tasty appetizer or a satisfying main course, this tart is an excellent choice.

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 3 tablespoons ice water
  • 1 cup ricotta cheese
  • 2 cups mushrooms, sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions:

1. Prepare the Tart Crust

Start by preheating your oven to 375°F (190°C). In a large bowl, combine the flour, cold cubed butter, and a pinch of salt. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Add ice water, one tablespoon at a time, until the dough comes together. Shape the dough into a disk, cover it with plastic wrap, and refrigerate for 30 minutes.

2. Sautee the Mushrooms and Onions

Meanwhile, heat the olive oil in a skillet over medium heat. Add the sliced onions and cook until they become translucent. Add the minced garlic and sliced mushrooms to the skillet. Sprinkle with salt, black pepper, and dried thyme.

Cook until the mushrooms are tender and any liquid that they release evaporates. Remove from heat and set aside.

3. Roll out the Dough

Remove the dough from the refrigerator and let it sit at room temperature for a few minutes. On a well-floured surface, roll out the dough into a circle that is about 12 inches in diameter.

Carefully transfer the rolled-out dough onto a parchment-lined baking sheet.

4. Assemble the Tart

Spoon the ricotta cheese onto the rolled-out dough, leaving about a 1 ½-inch border around the edges. Spread it evenly using the back of a spoon. Next, spread the sautéed mushrooms and onions on top of the ricotta cheese.

Sprinkle grated Parmesan cheese evenly over the filling, and fold the edges of the dough inward, creating a rustic border.

5. Bake the Tart

Place the tart in the preheated oven and bake for 30-35 minutes, or until the crust turns golden brown. The delicious aroma of the tart will fill your kitchen. Once baked, remove the tart from the oven and let it cool for a few minutes before slicing.

6. Serve and Enjoy

Garnish the tart with fresh chopped parsley, and slice it into wedges. Serve warm or at room temperature as an appetizer, side dish, or even a light lunch.
