Ingredients:

  • 1 pie crust (homemade or store-bought)
  • 5-6 apricots (sliced)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 egg (beaten)
  • 2 tablespoons turbinado sugar
  • 1 tablespoon unsalted butter

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Roll out the pie crust into a circle on a lightly floured surface. Place it onto a parchment-lined baking sheet.

3. In a small bowl, whisk together the granulated sugar and cornstarch.

4. Arrange the sliced apricots on the center of the pie crust, leaving about two inches of space from the edge. Sprinkle the sugar and cornstarch mixture over the top of the apricots.

5. Fold the edges of the pie crust over the apricots. The edges of the galette should overlap slightly.

6. Brush the beaten egg over the edge of the pie crust and sprinkle the turbinado sugar over the top. Dot the butter over the apricots.

7. Bake the galette in the preheated oven for 35-40 minutes or until the crust is golden brown.

8. Remove from the oven and let the galette cool for a few minutes before serving.
