Maja Blanca, also known as coconut pudding, is a popular dessert in the Philippines. Made out of coconut milk, cornstarch, sugar, and sweet corn kernels, this sweet dish is simple yet delicious.
It is commonly served during special occasions, gatherings, or as an afternoon snack.
Ingredients:
- 4 cups coconut milk
- 1 can of cream-style corn
- 1 1/2 cups cornstarch
- 1 cup white sugar
- 1/4 cup toasted grated coconut for topping (optional)
- 1 cup water
Instructions:
1. In a bowl, dissolve cornstarch in 1 cup of water. Set aside.
2. In a pot, combine coconut milk, cream-style corn, and sugar. Cook over medium heat and stir occasionally until it comes to a boil. Reduce the heat to low and add in the cornstarch mixture. Stir continuously until the mixture thickens.
3. Grease a 9-inch round pan with cooking oil. Pour the maja blanca mixture into the pan and smoothen the surface with a spatula or spoon. Let it cool down to room temperature.
4. Once cooled, refrigerate for at least 2 hours to set.
5. When ready to serve, sprinkle toasted grated coconut on top (optional).
Variations:
1. Maja Mais – Instead of cream-style corn, use whole kernel corn. Drain the liquid and blend the corn kernels until smooth. Strain the blended corn to remove the husk and add it to the mixture before adding the cornstarch.
2. Maja de Ube – Add 1 cup of mashed purple yam (ube) to the mixture before adding the cornstarch.
3. Maja Blanca Espesyal – Replace the sugar with condensed milk or evaporated milk for a creamier texture.
Conclusion:
Maja Blanca is a classic Filipino dessert that is easy to make and loved by many. It’s a perfect dessert for any occasion or for satisfying that sweet tooth cravings.
Give it a try and let your taste buds experience the magic of this delicious dessert.
