: Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 4 ounces crumbled feta cheese
  • 1 clove garlic, minced
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

: Instructions

  1. Preheat your oven to 375°F.
  2. Place each chicken breast in a large, resealable plastic bag and pound it with a meat mallet until it’s about 1/4″ thick. Be careful not to tear the chicken.
  3. In a bowl, mix together the spinach, feta cheese, garlic, breadcrumbs, egg, salt, and pepper.
  4. Place the spinach and cheese mixture in the center of each chicken breast. Roll up the chicken and secure it with toothpicks.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Brown each chicken breast on all sides, about 3-4 minutes per side.
  6. Place the skillet in the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  7. Remove the toothpicks and serve the chicken hot.
