  • 1 pound of ground beef or turkey
  • 1 egg
  • 1/2 cup of breadcrumbs
  • 1/4 cup of unsweetened applesauce
  • 1/4 cup of grated carrots
  • 1/4 cup of grated sweet potato
  • 1 tablespoon of parsley
  • 1 tablespoon of coconut oil

For the fries:.

  • 2 large sweet potatoes
  • 1 tablespoon of olive oil
  • 1 tablespoon of cornstarch
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of garlic powder

Instructions

: For the burgers

  1. Preheat your grill or oven to medium-high heat.
  2. In a large bowl, mix together the ground meat, egg, breadcrumbs, applesauce, grated carrots, grated sweet potato, and parsley until well combined.
  3. Using your hands, shape the mixture into patties that are about 1 inch thick and 3 inches in diameter.
  4. Heat the oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until fully cooked.

: For the fries

  1. Preheat your oven to 425°F.
  2. Peel and slice the sweet potatoes into thin strips.
  3. In a large bowl, toss the sweet potatoes with olive oil, cornstarch, salt, and garlic powder.
  4. Place the fries on a baking sheet in a single layer without overcrowding them.
  5. Bake for 15-20 minutes or until crispy.

Serving

Place the burger patty in a bowl or on a plate. Add a few pieces of sweet potato fries on the side. You can also add a dollop of plain Greek yogurt or mashed sweet potato as a topping.

Storage

You can store the burgers in an airtight container in the refrigerator for up to 3 days. The sweet potato fries are best served fresh, but you can store them in the refrigerator for up to 2 days and reheat them before serving.
