Ingredients

  • 1 (12 to 14 pound) turkey
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, quartered
  • 1 cup water

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Rinse turkey inside and out under cold running water.
  3. Pat the turkey dry with paper towels.
  4. Using your fingers, carefully loosen the skin from the breast and thigh meat by sliding your fingers under the skin and pushing it away from the meat.
  5. In a small bowl, mix together softened butter, garlic powder, onion powder, dried thyme, dried rosemary, salt, and black pepper.
  6. Spread half of the seasoned butter under the loosened skin of the turkey, massaging it into the meat.
  7. Spread the remaining seasoned butter over the outside of the turkey.
  8. Stuff the onion and lemon quarters into the cavity of the turkey.
  9. Place the turkey on a rack in a large roasting pan.
  10. Add 1 cup of water to the bottom of the roasting pan.
  11. Roast the turkey for approximately 3 to 3 1/2 hours, or until a meat thermometer inserted into the thickest part of the thigh without touching bone registers 165°F (75°C).
  12. Once the turkey is finished cooking, remove it from the oven and let it rest for 20-30 minutes before carving.
  13. While the turkey is resting, transfer the juices from the pan into a small saucepan.
  14. Bring to a boil over medium heat, then lower the heat and let the gravy simmer until it thickens slightly.
  15. Serve the turkey with the gravy on the side.
