Crème brulee with blackberry is a rich, creamy French dessert that is typically made with heavy cream, egg yolks, sugar, and vanilla.

This dessert is known for its crispy caramelized top, which is achieved by sprinkling sugar on top of the creamy custard and then broiling it until it’s golden brown and crispy. Adding blackberries to this classic French dessert adds a refreshing twist to the dish, making it perfect for summer.

Ingredients

  • 2 cups heavy cream
  • 5 egg yolks
  • 1/2 cup sugar
  • 1 tsp. vanilla extract
  • 1-2 cups fresh blackberries(depending on preferred amount)

Instructions

  1. Preheat the oven to 325 F.
  2. In a saucepan, heat the heavy cream until it’s hot but not boiling.
  3. In a mixing bowl, beat the egg yolks and sugar together until well combined.
  4. Add the vanilla extract to the egg mixture and stir to combine.
  5. Slowly pour the hot heavy cream into the egg mixture, whisking continuously until everything is well combined.
  6. Strain the custard through a fine-mesh sieve into a large measuring cup or bowl.
  7. Divide the custard evenly among 4-6 ramekins, depending on the size of the ramekins. Place the ramekins in a deep baking pan.
  8. Add hot water to the baking pan until it comes about halfway up the sides of the ramekins.
  9. Bake the crème brulee for 35-40 minutes or until the custard is set but jiggles slightly when shaken.
  10. Remove the ramekins from the baking pan and let them cool to room temperature.
  11. Refrigerate the crème brulee for at least 2 hours or until it’s completely chilled.
  12. To caramelize the sugar, sprinkle about 1 tbsp of sugar evenly over the top of each ramekin.
  13. Use a kitchen torch to melt the sugar until it’s golden brown and bubbly. If you don’t have a kitchen torch, you can use the broiler in your oven. Keep a close watch on the crème brulee, as the sugar can burn quickly under the broiler.
  14. Add fresh blackberries to the top of the crème brulee and serve immediately.
