Ingredients

  • 2 cups heavy cream
  • 1/2 cup white sugar
  • 6 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup white sugar

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Pour the heavy cream into a saucepan and heat over low heat until hot but not boiling. Add 1/2 cup of sugar to the hot cream and stir until it dissolves.
  3. In a mixing bowl, whisk the egg yolks with vanilla extract until light and fluffy. Then slowly pour the hot cream mixture into the egg yolks while whisking continuously.
  4. Strain the custard mixture through a fine mesh strainer into a measuring cup with a spout, and then pour it evenly into six 6 oz. ramekins or custard cups.
  5. Put the ramekins in a large baking dish. Fill the dish with enough hot water to come halfway up the sides of the ramekins.
  6. Bake the crème brulees in the oven for 30-35 minutes, or until just set with a slight jiggle in the middle. Take the ramekins out of the water bath and let them cool to room temperature on the counter, then cover and chill in the fridge for at least 2 hours, or up to 2 days.
  7. Just before serving, sprinkle an even layer of 1/4 cup white sugar over the top of each custard. Use a kitchen torch to caramelize the sugar until it becomes a crispy golden brown crust. Let it cool for a minute or two before adding a spoonful of fresh blueberries on top. Serve immediately.
