Mexican Quesadillas with Pork & Metsovone

There are also many different types of quesadillas that you can make, but today we will be focusing on a mouth-watering recipe that uses pork and Metsovone cheese.

Ingredients:

  • 2 cups of cooked pork shoulder or pork loin, shredded or diced
  • 8-10 flour tortillas
  • 2 cups of Metsovone cheese, shredded
  • 1/2 red onion, diced
  • 2 jalapeños, diced
  • 1/4 cup of fresh cilantro, chopped
  • 1/2 teaspoon of dried oregano
  • 1 teaspoon of ground cumin
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. In a skillet, heat the olive oil over medium heat. Add the diced onions and jalapeños and cook for 5 minutes, stirring occasionally.
  2. Add the cooked pork, oregano and cumin, and cook for another 5 minutes. Add salt and pepper to taste. Remove from heat and set aside.
  3. Take a tortilla and add some of the cooked pork and Metsovone cheese on top. Fold the tortilla in half.
  4. Heat up a skillet over medium heat. Place the folded tortilla on the skillet and cook for 2-3 minutes on each side, until the cheese has melted and the tortilla is crispy.
  5. Repeat this process for each tortilla.
  6. Serve with some fresh cilantro on top.
