  • 2 tsp. active dry yeast
  • 1 1/2 tsp. salt
  • 2 cups warm water

  1. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rye flour, rolled oats, cornmeal, flaxseeds, sunflower seeds, honey, yeast, and salt.
  2. Add the warm water and stir until a dough forms.
  3. Knead the dough on a lightly floured surface for 10 minutes, until it becomes smooth and elastic.
  4. Place the dough in a greased bowl and cover it with a clean towel. Allow it to rise in a warm, draft-free place for 1 hour, or until doubled in size.
  5. Punch down the dough and shape it into a loaf. Place the loaf in a greased 9×5 inch loaf pan and cover it with a clean towel. Allow it to rise again for 30 minutes.
  6. Preheat the oven to 375 degrees F. Bake the bread for 40-45 minutes, until it is golden brown and sounds hollow when tapped on the bottom.
  7. Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then, remove the bread from the pan and allow it to cool completely on a wire rack before slicing.
