: Ingredients

  • 3 tablespoons unsalted butter, plus extra for ramekins
  • 1/4 cup granulated sugar, plus extra for ramekins
  • 4 ounces bittersweet chocolate, chopped
  • 3 large eggs, separated
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar

: Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butter two 8-ounce ramekins and sprinkle sugar inside each ramekin. Shake and rotate the ramekins to coat the bottom and sides with sugar.
  3. In a heatproof bowl set over a pan of simmering water, melt the chocolate and 3 tablespoons of butter, stirring occasionally. Once melted, remove from heat and let it cool slightly.
  4. In a large mixing bowl, whisk together egg yolks, 1/4 cup sugar, salt, and vanilla extract for about 2 minutes, until thick and pale in color.
  5. Add the melted chocolate mixture and mix well.
  6. In another bowl, beat egg whites using an electric mixer until frothy. Add cream of tartar and continue beating until stiff peaks form.
  7. Fold one-third of the beaten egg whites into the chocolate mixture to lighten it. Carefully fold in the remaining egg whites in two parts.
  8. Divide the mixture between the prepared ramekins, filling them up to about 1/4 inch from the top.
  9. Bake in the preheated oven for about 15-18 minutes, or until the souffles have risen and set. Do not open the oven door while they are baking because cold air will cause the souffles to collapse.
  10. Serve immediately, garnished with whipped cream or fresh berries if desired.
