  4. Add the cod to the pan and fry for a further 2-3 minutes until it starts to turn golden brown.
  5. Stir in the tomato puree, smoked paprika, chicken stock, and double cream. Bring the mixture to a simmer, then reduce the heat and leave to cook for 5-6 minutes until the sauce has thickened.

  8. Brush the beaten egg over the top of the potatoes.
