Ingredients:

For the Sweet and Sour Chicken:.

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 1 cup pineapple chunks (drained)

For the Sweet and Sour Sauce:.

  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions:

Step 1: Prepare the Sweet and Sour Sauce

In a small bowl, whisk together the ketchup, rice vinegar, brown sugar, soy sauce, cornstarch, and water until well combined. Set aside.

Step 2: Coat the Chicken

Place the cornstarch in a shallow bowl or plate. Coat the chicken pieces with cornstarch, shaking off any excess.

Step 3: Sauté the Chicken
