Ingredients:

  • 2 1/2 cups of uncooked white rice
  • 3 1/2 cups of water
  • 1 can of coconut milk (14 oz)
  • 1 teaspoon of salt
  • 1/2 cup of dried cherries
  • 1/2 cup of slivered almonds
  • 1/4 cup of sugar
  • 1/4 cup of chopped cilantro
  • 1/4 teaspoon of ground cardamom
  • 1/4 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground turmeric
  • 1 tablespoon of unsalted butter

Instructions:

1. Rinse the Rice

Rinse the uncooked rice with water until the water is clear and drain. This will remove excess starch and prevent the rice from becoming sticky.

2. Cook the Rice

In a medium-sized pot, add the rinsed rice, water, coconut milk, sugar, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid.

Cook for 18-20 minutes, or until the liquid has been absorbed and the rice is tender. Once done, fluff the rice with a fork and set aside.

3. Prepare the Cherry Mix

In a small pan, heat the butter over medium heat. Add the dried cherries and sauté for 2-3 minutes, or until the cherries have softened.

4. Mix the Cherry Mix with the Rice

5. Add the Cilantro and Serve

After 5-10 minutes, add the chopped cilantro and mix well. Serve warm and enjoy!.
