  • 8 sausages (pork or beef)
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can of chopped tomatoes
  • 2 cans of cannellini beans, drained and rinsed
  • 2 cups of chicken broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp olive oil

  1. Preheat your oven to 375°F.
  2. Heat up a large oven-safe pot on medium-high heat. Once it’s hot, add the olive oil to the pot.
  3. Add the sausages to the pot and cook for about 5 minutes or until they’re browned on all sides. Then remove the sausages from the pot and set them aside.
  4. Add the onion, garlic, carrots, and celery to the pot. Cook for about 5 minutes or until the vegetables have softened.
  5. Add the tomato paste, thyme, and paprika to the pot. Stir everything together and cook for another 2 minutes.
  6. Add the chopped tomatoes, cannellini beans, and chicken broth to the pot. Bring everything to a boil, then reduce the heat to low and let it simmer for about 10 minutes.
  7. Add the sausages back to the pot and stir everything together. Add salt and pepper to taste.
  8. Place a lid on the pot and bake it in the oven for about 30 minutes or until the sausages are cooked through and the vegetables are tender.
  9. Remove the lid and bake for an additional 10 minutes or until the top is crispy and golden brown.
