Ingredients:

Before you start cooking, gather the following ingredients:.

  • 8 ounces of your preferred noodles (such as soba, udon, or rice noodles)
  • 1 tablespoon of vegetable oil
  • 8 ounces of mushrooms (cremini, shiitake, or oyster mushrooms work well), sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 4 cups of vegetable broth
  • 2 cups of fresh greens (spinach, bok choy, or kale), roughly chopped
  • 2 large eggs
  • Salt and pepper to taste
  • Optional toppings: sliced scallions, sesame seeds, or chili flakes

Instructions:

1. Cook the noodles according to the package instructions. Once cooked, drain and set aside.

2. In a large pot, heat the vegetable oil over medium heat. Add the sliced mushrooms and garlic, and sauté until the mushrooms are golden brown and cooked through.

3. Stir in the soy sauce and sesame oil, coating the mushrooms evenly.

4. Pour in the vegetable broth and bring it to a simmer. Allow the broth to simmer for about 10 minutes to let the flavors meld together.

5. Add the fresh greens to the pot and cook until wilted, stirring occasionally. This should take about 2-3 minutes.

6. While the greens are cooking, fill a separate small pot with water and bring it to a gentle boil. Carefully add the eggs to the boiling water and cook for about 6 minutes for a slightly soft yolk or 8 minutes for a firmer yolk.

7. Once cooked, transfer the eggs to a bowl of cold water to stop the cooking process. Peel the eggs and set aside.

8. Season the broth with salt and pepper to taste. Adjust the seasoning according to your preference.

9. Divide the cooked noodles into serving bowls. Ladle the mushroom and greens broth over the noodles, making sure to distribute the mushrooms and greens evenly.

10. Slice the peeled eggs in half and place them on top of the noodle bowls.

11. Garnish with any optional toppings you desire, such as sliced scallions, sesame seeds, or chili flakes.

12. Serve your savory noodle bowls hot and enjoy.
