Ingredients

  • 2 pounds of stewing beef, cut into bite-sized pieces
  • 2 tablespoons of all-purpose flour
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups of beef broth
  • 2 cups of frozen mixed vegetables (peas, carrots, green beans, etc.)
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 1 sheet of thawed puff pastry
  • 1 beaten egg for egg wash

Instructions

  1. Preheat your oven to 375°F.
  2. In a large pot or Dutch oven, heat a tablespoon of cooking oil over medium-high heat. Add the beef and cook until browned on all sides.
  3. Sprinkle the all-purpose flour over the beef and stir to coat. Add the onion and garlic and cook until the onion is translucent.
  4. Add the beef broth, mixed vegetables, thyme, and rosemary. Bring the mixture to a simmer and cook for 20-25 minutes, or until the beef is tender.
  5. Season the mixture with salt and pepper to taste. Transfer the beef mixture to a baking dish.
  6. Roll out the puff pastry to fit the size of your baking dish. Place the pastry on top of the beef mixture, tucking in the edges and cutting a few slits on top to allow for air to escape.
  7. Brush the beaten egg over the pastry to create an egg wash.
  8. Bake the beef pie in the oven for 30 minutes, or until the pastry is golden brown and the filling is hot and bubbly.
  9. Allow the pie to cool for a few minutes before serving.
