For the cake:.

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • ½ cup crushed pineapple, drained
  • ½ cup chopped walnuts or pecans

  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare the cake

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2: Mix the dry ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3: Combine the wet ingredients

In a separate bowl, beat the eggs and vegetable oil until well combined. Gradually add the wet mixture to the dry ingredients, mixing until just incorporated.

Step 4: Fold in the carrots, pineapple, and nuts

Gently fold in the grated carrots, crushed pineapple, and chopped walnuts or pecans until evenly distributed throughout the batter.
