Lemon tartlets are a delightful and easy-to-make dessert that is perfect for parties or as a sweet treat after dinner.
The tartness of the lemon perfectly balances the sweetness of the pastry, and the lightness of the dessert makes it a beautiful finish for any meal. Below is a step-by-step guide on how to make lemon tartlets that will impress your guests and satisfy your sweet tooth.
: Ingredients
- 1 sheet of puff pastry
- 2/3 cup lemon curd
- 1/4 cup icing sugar, for dusting
- 2 tablespoons fresh lemon juice
- 1/2 cup whipped cream
- 1 teaspoon lemon zest
: Directions
Step 1: Prep Work
Begin by preheating your oven to 400°F (205°C) and gathering all of your ingredients. Remove your puff pastry from the freezer to thaw and grease 6 tartlet moulds with butter or cooking spray. If you don’t have moulds, simply use a muffin tin.
Step 2: Roll Out the Pastry
Once your pastry is defrosted, dust your countertop, and roll out the sheet of puff pastry to approximately 1/4 inch thickness. Using a round cutter, cut out 6 circles slightly larger than the diameter of your tartlet moulds.
Step 3: Line Moulds with Pastry
Place each circle of pastry into the buttered tartlet moulds, pressing the pastry firmly into the corners and sides of the moulds. Trim the edges of the pastry to align with the top of the moulds and use a fork to pierce the bottoms of the tartlets.
This will help air to escape during baking and prevent the pastry from puffing up too much.
Step 4: Bake Pastry Moulds
Bake the pastry moulds for 10-12 minutes, or until the pastry is golden brown. Remove from the oven and allow to cool for 5 minutes before gently removing the tartlets from the moulds and placing them on a wire rack to cool completely.
Step 5: Make Lemon Curd Filling
In a bowl, stir together the lemon curd, lemon juice, and lemon zest. Mix until thoroughly combined and smooth. Whisk the whipped cream until thick and smooth, then gently fold it into the lemon curd mixture.
Step 6: Fill the Tartlets
Once the tartlets have cooled, spoon the lemon cream mixture into each pastry shell, filling up to the top. Smooth out the lemon cream with a spoon or spatula. Let the tartlets chill in the fridge for at least 2 hours or overnight.
Step 7: Serve and Enjoy
When it’s time to serve the lemon tartlets, take them out of the fridge and sprinkle icing sugar over the top of each tartlet. You can also add a small lemon wedge or a bit of fresh mint to each tartlet for presentation.
Serve immediately and enjoy!.
