- 1lb. of pork tenderloin, thinly sliced
- 2 medium-sized eggplants, peeled and chopped into small pieces
- 3 cloves of garlic, minced
- 1/4 cup of soy sauce
- 2 tablespoons of vegetable oil
- 2 tablespoons of ginger juice
- 1 tablespoon of corn starch
- 1 teaspoon of sesame oil
- 1 teaspoon of sugar
- 1/2 cup of water
: Instructions
- Marinate the sliced pork with soy sauce, ginger juice, and corn starch. Mix well and let rest for at least 15 minutes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the sliced pork and stir-fry until browned and cooked through. Remove the pork from the skillet and set aside.
- Add another tablespoon of oil to the skillet, add minced garlic, and stir-fry until fragrant. Add chopped eggplant to the skillet, and stir-fry for about 5 minutes, until the eggplant starts to soften.
