Gyulbasi is a delicious Turkish dish that is typically made with minced meat and various spices. However, here we present a vegetarian version of this mouthwatering dish that will surely satisfy your taste buds.
Packed with flavor and nutritious ingredients, this vegetarian gyulbasi can be enjoyed by meat-lovers and vegetarians alike. So, let’s get cooking!.
Ingredients:
- 2 cups of cooked brown lentils
- 1 cup of cooked quinoa
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 carrot, grated
- 1 zucchini, grated
- 1 tomato, diced
- 1 tablespoon of tomato paste
- 1 tablespoon of soy sauce
- 1 teaspoon of smoked paprika
- 1 teaspoon of cumin powder
- 1/2 teaspoon of red pepper flakes (optional)
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley, chopped (for garnish)
Instructions:
1. Heat some olive oil in a large skillet over medium heat.
2. Add the chopped onion and minced garlic to the skillet and sauté until they become translucent and fragrant.
3. Add the diced bell pepper, grated carrot, and grated zucchini to the skillet. Sauté for a few minutes until the vegetables start to soften.
4. Push the vegetables to one side of the skillet and add the tomato paste to the empty side. Allow it to cook for a minute or two to bring out the flavors.
5. Now, mix the cooked lentils and quinoa into the skillet with the vegetables and tomato paste. Stir everything together until well combined.
6. Add the diced tomato, soy sauce, smoked paprika, cumin powder, and red pepper flakes (if desired) to the skillet. Season with salt and pepper to taste.
Stir everything together and cook for an additional 5-7 minutes to allow the flavors to meld together.
7. Remove the skillet from heat and let the mixture cool slightly. Once cooled, transfer the mixture to a food processor and pulse a few times until the ingredients are well mixed but still have some texture.
8. Preheat your grill or stovetop griddle over medium-high heat.
9. Form the gyulbasi mixture into long sausage-like shapes, about 1.5 inches in diameter. Mold them together with your hands, making sure they hold their shape.
10. Lightly grease the grill or griddle with some olive oil. Place the gyulbasi on the hot surface and cook for around 4-5 minutes per side, or until they develop a nice char and are heated through.
11. Once they are cooked, remove the vegetarian gyulbasi from the grill or griddle and let them cool for a few minutes.
12. Serve the vegetarian gyulbasi on a platter and garnish with freshly chopped parsley. You can enjoy them as they are or wrap them in warm pita bread with your favorite salad ingredients and sauces.
Enjoy your homemade vegetarian gyulbasi, a flavorsome and healthy alternative to the traditional meat dish!.
