Quiche is a delicious and versatile dish that can be served for breakfast, brunch, lunch or dinner. This recipe for vegetarian quiche with spinach and roasted peppers is a flavorful and healthy option that is easy to make.

Ingredients:

  • 1 9-inch pie crust, homemade or store-bought
  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup spinach, chopped
  • 1 red bell pepper, roasted and chopped
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, whisk together the eggs, milk, salt, black pepper and nutmeg.
  3. Stir in the chopped spinach, roasted red pepper, Gruyere cheese, Parmesan cheese and fresh basil.
  4. Pour the mixture into the pie crust.
  5. Bake for 40-45 minutes, until golden brown on top and set in the center.
  6. Let the quiche cool for a few minutes before serving.
